Freeze-drying (lyophilization) is an age-old method for preserving
and making perishables portable via freezing and sublimating water
under reduced pressure. Dating to 13th-century Andean Indians, it
became sophisticated in the 1950s. First developed for blood plasma
in World War II, it later spread to consumer foods. Albert Altmann
freeze-dried organs in 1890; 1920s patents included rabies virus
